Fresh cheese, consisting of a spun paste bag enclosing inside flakes of mozzarella enriched with cream (stracciatella). It presents smooth surface, pearly white color, soft texture. The taste is sweet, delicate, creamy. Processing by expert hands gives the product its unmistakable shape and inimitable flavor. Burrata is a typical product of the Apulian dairy tradition, particularly in the province of Bari.
